How to use it
A good log is more than numbers. It shows what you did.
01 Set up
Name each appliance
Write a name staff recognise, such as "Prep fridge" or "Chest freezer", at the top of each column.
02 Record
Take real readings
Check at least once a day, starting with your opening checks. Write the measured temperature and your initials.
03 Act
Write down the action
If a reading is out of range, re-check it, protect the food and write what you did in the last column.
Food Standards Agency guidance says cold food must be kept at 8°C or below in England, Wales and Northern Ireland, and recommends setting fridges at 5°C or below. Scottish businesses should follow Food Standards Scotland guidance. Use the targets in your own food-safety system.
